Rembrandt – The Pancake Woman

Hello! And A Very Happy Mardi Gras to you too…

Scotch Pancakes or Drop Scones:

  • 75g (6 oz) self-raising flour
  • 1 level tsp baking powder
  • 40g (1 ½ oz) caster sugar
  • 1 large egg
  • 200ml (7 fl oz) milk

  1. Mix flour, baking powder and sugar. Add the egg, and beat in a little of the milk at a time to make a thick, smooth batter
  2. Grease a heavy-based frying pan and turn up the heat
  3. Once hot  drop tablespoons of the pancake mix to the pan. Turn the pancakes when bubbles appear and cook until golden brown
  4. Dried fruit can be added to the mix
  5. Eat immediately with butter
  6. Don’t buy the ones in the packet
